THE LAST HOORAH?

FRIDAY

I was so tired when I arrived home last night, i didnt have the energy to blog and whatnot.
I had a few friends that came over to hangout and we did actually have a late dinner. That was a bit of a challenge because NONE of my friends are vegan and so aren't late night restaurants. 

However, i did chose some vegan friendly dishes which were mostly rice and pickled veggies. Everyone's meal looked so mouthwatering good!
Korean sushi or kimbap with a side of salad and shots of soju.



This meal was heavy as f***! even though it was mainly rice and veggies the stomach couldn't handle it. 


SATURDAY

THE LAST DAY!

I did reward myself with a meal from Veggie Grill. 100% vegan friendly restaurant located in Santana Row and throughout california. They have delicious dishes like burgers and nachos that are vegan! Pretty tasty  but i couldn't stand vegan cheese. Its just too weird to me!

My phone had low battery so i didnt get a chance to take a photo :(

But this whole experience was such an eye opener! Not so life changing but it really did change my perspective on what goes into my body.

Would I call myself vegan? Not 100% but I still do want to continue this challenge for the rest of my life. Maybe ill have a burger here and there but i want to limit that to a least two times a week!


and just for the record, I didn't treat this as a "weigh loss" diet because I rarely workout and I didn't really lose weight (not that i need to though). I wanted to see what other vegans get to experience health wise. Good skin and long lasting energy!

btw...i do see a a difference in my skin!

I encourage everyone to really take on this challenge. Not three days not one but A FULL WEEK!

DAY 5 - ALMOST THERE!

This morning I felt energized during my cardio session. My lazy ass usually would want to stop after 30  minutes but after my daily oatmeal breakfast, I felt like I could've gone longer! Sadly, I was short on time and had to fit in some weights after.

But I actually felt good this morning! Not too groggy or sleepy! I hope it's from the good food i've been consuming.



Still feeling full from todays meals, I made a quick butternut squash soup for dinner. To be honest, Im getting a bit tired from cooking my meals, work, school and just life. It was just so easy to grab or microwave a precooked meal from Costco.

Don't we all wish we had a personal chef sometimes?

pepper, paprika, a pink of curry (this made it spicy).

taste so good! especially after a long tiring day.

DAY 4 - SMOOTHING SAILING




Super excited that my veggie patties turned out like actual veggie patties! When I cooked them yesterday it just looked like stir fried rabbit food, but I added some organic breadcrumbs to soak in the liquid. I even had some left over to freeze for later use!


For late lunch I used the leftover pasta and mixed it up with whatever veggies and greens I had laying around. Never really liked a cold pasta salad but this was delish!



Just finished the day off with some steamed veggies. I needed to fulfill my sweet tooth and had apple slices with cookie butter. OMG THIS SHIT IS YUMMY! ID PUT THIS MUTHAFLUCKA ON EVERYTHING! and its vegan so booyah!


oh! i purchased some vitamins just incase if i was missing out in some daily action. The woman's daily supplements were on sale at Target and pretty much contained all the nutrients you can get from eating meats. dairy and eggs. 
If there are any supplements I should take please let me know!

Im pretty much past my withdrawal stage and I do feel a satisfying "full" after every meal! I think i might extend this challenge until I leave for LA next weekend cus I'm a MUTHA FLOCKIN GANGSTAH LIKE THAT.

DAY 3 - THE BOWEL MOVEMENT

GOOD LORD. THE TOILET AND I HAVE BECOME BFFS.

Do I really want to grow up have to rely on prescription medicine? Most filipinos suffer with high cholestrol because of poor dieting and nutrition.

But let's face it. We're spoiled. My parents did not grow up with the health and technology we have now. No one really told them to wear sunscreen everyday or to consume high amounts of fruits and veggies.

It's not to late to spread the word about good health to our generation. We do have ability and resources to live a healthier and longer life without any "suffering".

but enough blabbering.
My mouth is starting to water at the thought of a cheeseburger :(



I attempted to make a veggie patty with the remaining pulp from juicing, onions, garlic, peppers, broccoli, beans and kale. I used a little too much lemon juice and water so it didn't end up looking like a patty. But it tasted great! Almost like a falafel. Maybe i'll use some breadcrumbs to soak up the liquid.





I also loaded up on some carbs as well as some vegan snacks I picked up a few days ago.
Don't worry there's some heirloom tomatoes in that pasta! AND the pasta is whole wheat FYI

But other that, I snacked on trail mix, granola, and an asian pear I bought from the farmers market.

Still facing some withdrawls but I feel a little better than yesterday.

DAY 2

To be honest, today was a bit of a challenge.

However, I did enjoy my overnight oats and chia pudding for breakfast!



...then my cravings started to kick in
I replaced meat and eggs with soy chorizo with tofu accompanied by an avocado and some leftover bean dip!


I did have my regular kale smoothie too!

         
My body felt as if I was going through a withdrawal. I faced some hunger issues and small mood swings throughout the day. Although, I kept snacking on grapes, high protien granola and trail mix (which I'm starting to grow tired of..) it didn't really satisfy my hunger needs.

Hopefully im getting all the minerals and vitamins I need. The last thing I would want to do is faint or wake up completely weak!

I know I can get through these next few days! All it takes is a little more courage and a positive mindset!

Hopefully I can continue this longer than a week.




oh! and these baby japanese sweet potatoes are so cute and sweet! I actually took some to work that I steamed earlier today. They are delicious and packed with vitamins.


P.S. Carl you are an asshole for eating those chicken wings next to me.

DAY 1

Slept in a little late this morning knowing that I would be skipping breakfast. Thank God I was not working today, which gave me the whole day to grocery shop, relax, and finally get my mind back to norm after a crazy week.

I headed out to the local farmers market which is held every Sunday at the mall down the street. There were so many unique fruits and veggies, I was so overwhelmed on what to pick out for this weeks meal plan.






But look at these gorgeous heirloom tomatoes! I immediately grabbed some among the other eye pleasing fruits and veggies I found.

Check out the purple bell pepper and the baby sweet potatoes!
These japanese sweet potatoes would be great for a quick snack especially since im always on the go!


I also picked up some carrots, grape, strawberries,
kale & apples.










Once I arrived home, I started prepping my juices and made a a simple salad for lunch.

I thought that it wouldn't get me full since I skipped out on brekkie so I made a kale fruit smoothie.

I also saved the pulp for veggie burgers and froze my strawberries for tomorrow's smoothie!



For a snack, I made a simple bean dip (that looked like shit) whole grain tortilla chips.
I also snacked on some raw trail mix throughout the night since we were out being terrified at a haunted maze.


Thanks to my friends, I was tempted with jack & the box for dinner but I had the courage to resist and quickly blanched some green beans for dinner!
Simple & easy. 
This wasn't so bad.
...except the frequent bathroom trips were annoying.

FAREWELL...

to late night jack and the box meals to sober up after a night of drinking. I highly recommend the sourdough jack with a fried egg to avoid the morning hangover. (I SWEAR IT WORKS)

to free homemade french macrons from a talented cousin of mine

to quick 7/11 runs for chips and junk food

to the delicious hole in the wall Thai restaurant I JUST found out about

to counter burger and pink berry, which are right across from my workplace.


to basically anything my fat ass consumed that was non-vegan in the past 24 years of my life.

This 7-day challenge is not just for my persuasive speech class, but a lifestyle change in hopes for a healthier and longer life! (and hopefully this challenge continues longer than 7 days!)


Please know that my intention for this challenge is not just for my assignment, but I've been curious about this lifestyle for awhile and finally had the guts to try it out.

This blog will contain 100% of my honesty, daily meals, feelings & thoughts.                        NO B***S***!

Lastly,
Thanks to my close friends and family whom has influenced and helped me through this...and my boyfriend who "suppose" to be taking on the challenge with me.
